Roasted Blue Potatoes with Fresh Thyme
I found these little blue potatoes at a nearby farmers market.
They are really beautiful when you cut into them and they taste great too! The blue in blue potatoes comes from their flavonoid content which makes them healthy.
Here is a simple recipe to enjoy the true flavor of these delicious potatoes. I picked a few sprigs of our thyme plant growing on our balcony for an extra kick.
7 Blue potatoes
3 Scallions Chopped
3 Sprigs of fresh thyme
Olive Oil
Salt, pepper, and red chili flakes to taste
1. Preheat oven to 400 F
2. Cut blue potatoes into quarters and chop scallions.
3. Remove thyme leaves from their stems.
4. Lay out ingredients in baking pan and drizzle with olive oil and seasonings and bake in the oven for 15-20 minutes (I like them on the harder crisper side so I usually bake them for 15 minutes.)
5. Serve!
